Bach and Mozart are both amazing, but kind of repetitive. Luckily Beethoven was able to stop everything from constantly following the rules. I mean, once you hear the start of a Mozart piece, you know what to expect for the rest of it...with a few exceptions.
My problem with Bach is that it's so mathematical, however fascinating. I just find the thunderousness of Berlioz, Beethoven and Brahms to be beyond belief. It grabs hold of me and forces me into their world.
You mentioned you like Schubert, but you didn't mention Schumann. What about some 20th century composers such as Durufle, and Glass?
Usually it's the singers themselves that give opera and song cycles a pretentious feel. You have to find the right one. Folk music is just awesome haha
